Food news of the week:
When I was 17 I wrote about what I wanted in 5 years and what I wanted in 10 years and for the latter one of them was to be able to enjoy some of the finest or most fun foods in the world. Now, 10 years later, I’m tearing up slightly, as I was invited to such a fun eating adventure at Humble Chicken, for today’s review below. HC is by Mr Sato who used to work with Clare Smyth (of Core by Clare Smyth), and at Eleven Madison Park in New York. 17 year old me is screaming. Next, I’m seriously impressed by the desserts at Daphne’s (below) in South Ken, especially the passionfruit cheesecake and classic tiramisu, and I am obsessed with this salted date almond butter which inspires today’s 10-minute flourless cookie recipe.
Science of the week:
Found an interesting article on the use of hydrogenated water as an adjunct to cancer therapy. The way it works is: hydrogenated water is a powerful antioxidant—> antioxidants reduce harmful oxidative stress in the body, which happens when our cells are exposed to high amounts of radiation, like in chemotherapy for cancer therapy. I don’t have experience in cancer research myself but it did get me thinking about how toxic our everyday drinking water can be, and considering our bodies are all at least 70% water, I can see how making a change here would make a huge difference.
Insight of the week:
Harsh structure and cubic references make me uncomfortable. Like raw celery, or this bag which I can’t stand but somehow see everywhere? I’ll give Picasso a pass. But carrot cubes and leaf insects begone.
Recipe of the week:
I found the aforementioned almond butter at Whole Foods, and have been using it in everything from cookies to toast toppings to just on its own, to be honest. These almond butter cookies are so easy and take just 10 minutes to bake– the dream!
Almond Butter Cookies (flourless, makes around 16 medium cookies)
Ingredients
1 cup almond butter
1 teaspoon fine salt
75g white caster sugar
65g soft, light brown sugar
1 tsp baking soda
1 egg
Optional: half a cup of chocolate chips/ nuts/ crushed biscuits
